Looking at the total volume in USD we can see that the volume in USD for ERC20 tokens is dominated by stables for the most part. USDC has been 50% of volume transferred to zkSync, showing the need for stables. Outside of stables, other notable erc20 tokens include wBTC, GVT, wrapped stETH, and LDO. Looking at the number of transfers USDC still has the lead but not as dominant as it is in volume coming around ~38% as of writing. In terms of tokens, typical "Shit Coins" see heavy usage in terms of token volume. Looking at the chart below, the average price for transfer for coins like wbtc, CRV, and other blue chip erc20 tokens where as the average transfer for stables, while still a pretty penny is much smaller
